Celery and Stilton soup

This is a cheap soup to make! I had an extra bunch of celery in the fridge that needed using up- and whenever I need to use something up I usually end up making soup!! We do love soup in this house- and it’s such an easy way of giving the kids a bowlful of vegetables without any complaints!

If you don’t want to use wine just add extra stock- but I think the wine makes this special!

Ingredients-

An entire bunch of celery

2 small onions or 1 large one

1 leek

2 small potatoes or 1 large one

2-3 cloves of garlic

20g butter

1 teaspoon of parley

1/4 pint white wine

1 1/2 pints of vegetable stock

150g Stilton

Use a large knife to slice the celery while it’s still in a bunch (rather than cutting each  stick individually!) Dice the onion, slice the leek, finely chop the garlic and peel then cube the potato

Melt the butter in a large pan

Add all the veg and cook on a low- medium heat for 10mins

Add the parsley

Then the white wine

And the stock (I’m using my homemade vegetable stock that I freeze until I use it!)

Bring to the boil then simmer for 15mins

Blend the soup. I use a hand blender but you’ll get a far smoother result if you use a proper blender.


Cut the Stilton into cubes then stir into the soup until it melts


Serve!
