Courgette chips

Here’s a way to turn a boring courgette into something special! Feel free to alter the choice of herb- most would work well!


One large courgette 

One slice of bread

1 teaspoon of oregano

1/2 teaspoon of black pepper

Pinch of salt

1-2 tablespoons of Parmesan

1 egg

Cut the courgette into chips removing the seeded middle area

Whizz up a slice of bread into breadcrumbs

Put the breadcrumbs into a bowl and add the oregano, pepper and salt

Finely grate the Parmesan into the bowl

Mix through

In another bowl best the egg with a fork

Dip each courgette into the egg

Then roll in the breadcrumb mixture

Then lay onto a baking tray. Repeat until all the courgette is coated.

Place in a preheated oven at 190-200 degrees for 15mins
