This recipe turns coleslaw into a fabulously healthy dish and it’s so easy to do (I have no idea why I’ve been buying the pre prepared stuff so much when I could be doing this more!)
Ingredients-
1/4 white cabbage
1/4 red cabbage
2 carrots
1/2 courgette
1/2 onion
3-4 tablespoons Greek yoghurt
2 tsp wholegrain mustard
Lemon juice
1 tablespoon white wine vinegar
1 tablespoon maple syrup (I would usually use honey to sweeten this one but I’ll be giving to baby so honey’s a no go until she reaches 1)
Salt & pepper
Finely slice the cabbage
Use a vegetable peeler to create thin strips of carrot
Put all the veg into a large bowl and mix everything together
Add 3-4 tablespoons of Greek yoghurt (depending on how wet you like it)
A little squeeze of lemon juice
2 teaspoons of wholegrain mustard
One tablespoon of white wine vinegar and one tablespoon of maple syrup (or honey)
