Butter roasted cauliflower

I’ve fancied doing a whole roasted cauliflower for a while now and I’m so glad I finally got round to it! This was delicious and my toddler couldn’t get enough of it (good job I made 2 of them!)

The butter soaks through the whole thing as it roasts so it’s certainly not low fat but it is essentially one big vegetable so I’m happy enough with that!
Ingredients-

Cauliflower

55g butter

Tablespoon of dill

1 clove of garlic

1 tsp ground cumin

Grated rind of 1/2 lemon

Salt & pepper

(Ignore the olive oil in the picture- I ended up not using it!)

Remove the leaves from the cauliflower and cut out the main hard stem being careful not to cut any of the flourets off

In a food processor put the butter, dill and garlic and whizz into a paste


Add the lemon rind, cumin and a little salt and pepper and blend again

Put the cauliflower on a baking tray and spread the butter mixture over the top

Until it’s covered. Put into the oven at 180 degrees for 80mins

Use a skewer to check if it’s cooked all the way through


Cut a wedge out and serve!
