Chicken and vegetable stir fry

This recipe is so easy to throw together and adapt to whatever you’ve got in! You can easily substitute the chicken for prawns, tofu, beef- whatever you fancy!

Ingredients-

4 tbsp maple syrup

4 tbsp soy sauce

3 tbsp water

1 tbsp balsamic vinegar

Juice of half a lemon

3 cloves of garlic

1 tsp grated ginger

1 tsp paprika 

1 tsp sesame oil

Chicken

1 small carrot

1/2 red pepper

1/2 broccoli

6-8 baby sweetcorn

10-12 mangetout

6-8 mushrooms

In a small pan put the maple syrup, balsamic vinegar, soy sauce, lemon juice and water

Crush in the garlic and add the ginger

Add the paprika and stir

Bring to the Boil and then reduce to a gentle simmer for around 5mins

Mix in the sesame oil and leave to one side


Prepare the veg. Slice the carrots, peppers, mushrooms, mangetout and baby sweetcorn. Cut the broccoli into small flourets.

In a wok or deep frying pan heat a tablespoon of oil (I used rapeseed oil but vegetable oil is fine)

Cook the chicken thoroughly for around 10mins stirring constantly

Add a little black pepper

Throw in the veg and cook for 2-5 mins (2mins if it’s just for toddler to adult/ 5mins for baby!)

Add your sauce and heat through for another 2mins


Serve on its own or with rice!
