Ratatouille

I know not everyone’s a fan of aubergines or courgettes (my husband definitely isn’t!) but I like them so will continue to make things with them and in my book you can’t go wrong with a good ratatouille- and it’s so simple to do and perfect for babies! My 6 month old absolutely wolfed this one down- no seriously she did!!

Ingredients-

2 aubergines

2-3 courgettes

3-4 peppers (red & yellow)

Olive oil

One large red onion

2 cloves garlic

Dried thyme

5 large tomatoes 

Tin of chopped tomatoes

1 tablespoon balsamic vinegar

Large handful of basil with stems

Lemon rind


Chop the aubergine into large chunks 

In a large frying pan heat a little olive oil and fry the aubergine for 2-3 mins either side. Then put to one side

Chop the courgette and peppers into large pieces


In the pan heat a little more oil and fry the courgette and pepper for 5 mins- set aside

Cut the basil stalks, finely slice the garlic and cut up the onion. Fry in the pan with a teaspoon of dried thyme for 10mins until soft

Pour everything into a large casserole pot

Chop the tomatoes and add to the dish

Add the tinned tomatoes

And a tablespoon of balsamic vinegar. Bring to the boil then reduce to a gentle simmer and leave it with a lid on for 30mins

Finely grate the rind of half a lemon into the pot

Tear the basil leaves and stir in
