No sugar-no butter-no flour fruit crumble!

This is a far less naughty version of a classic pudding! Don’t get me wrong- it’s still got a lot of maple syrup so it’s definitely something to consider a treat but it’s got no refined sugar and all good fats instead of the usual ingredients. It tastes great so no one feels they’re missing out too!

Maple syrup is fast becoming my new favourite ingredient! Hence the huge bottle of it!!

Ingredients-

100g almonds

100g walnuts

125g oats (use gluten free oats if you want to make it gluten free!)

3 tablespoons coconut oil

100ml maple syrup

Cinnamon

3 apples

4 plums

Box of blackberries

Whizz the almonds in a food processor until flour like texture

Do the same with the walnuts then put both into a bowl

Add the oats and mix

In a pan put the coconut oil, maple syrup and a teaspoon of cinnamon and melt together on a low heat

Pour over the dry ingredients and mix together well

Peel and slice the apples and cut up the plums. Arrange the fruit into an oven proof dish. I’ve used this combination of fruit because we have blackberries growing down our lane, a plum tree and apple trees in our garden so it’s all basically free!

Sprinkle over some cinnamon

Top with the crumble and bake in a preheated oven at 180 degrees for 30-35mins

Serve with icecream (ours is banana only icecream so no dairy or sugar in that either!)
