So when I need something for tea made quickly I do resort to ready made pastry occasionally. Particularly puff Pastry which is quite a chore to make yourself. This is a veg-loaded recipe which tastes great and can easily be made vegetarian by leaving off the chorizo!
Parmesan or similar hard cheese
I used half of the ready made rolled pastry. Put it on a lightly greased baking tray.
Spread a layer of sour cream over the pastry leaving a small border round the edges
Add a little tomato purée and spread over (mixing with) the sour cream
Grate cheddar over the top
Start to layer up the veg- yellow peppers, red onions and mushrooms…
Then sweetcorn and spinach…
Finally a sprinkle of Parmesan and some small cubes of chorizo. Pop into a preheated oven at around 180 degrees for 15-20min
Serve hot or cold (I actually prefer it cold the following day!)
