This is a great midweek dinner or lunch that takes very little time to do and is full of veg! My husband refuses to accept it as a meal unless it’s got some kind of meat involved hence the bacon!! I’d be happy just having the veg myself.
Ingredients-
Half a cauliflower
Half a broccoli
1 leek
3 pieces of bacon
Butter
Flour
Milk
Cheese (cheddar or similar)
Wholegrain mustard
Chop the broccoli and cauliflower into small florets. Cut the bacon into strips and the leek into small pieces.
Pop the broccoli and cauliflower into a pan and boil
In a little oil or butter fry the bacon and leeks on a high heat for a couple of mins then reduce to a low heat and leave to soften while the veg are boiling.
To make the sauce- melt 40g of butter in a pan on a medium heat.
Add 40g of plain flour and cook out for 2mins until the colour deepens a little
Using a balloon whisk, add 3/4 pint of milk in a constant dribble whisking non-stop until you’ve got a smooth paste- at this point you can add the rest of the milk and stir. Keep stirring while the milk heats and the sauce thickens.
Add some grated cheese. The more mature the cheese, the less you need to flavour the sauce.
Add a teaspoon of whole grain mustard. Keep stirring the sauce so it doesn’t stick to the bottom of the pan.
Drain the veg
Put them back in the pan with the leek & bacon
Pour over the sauce and stir everything in
