I love seafood and I guess that’s rubbed off on my little girl- it’s one of her favourite things. We all love this paella- it’s full of veg and delicious!
Ingredients-
Chorizo
Seafood mix (I used 2 packs)
1 Onion
3 cloves of Garlic
1 large Red pepper
1 Courgette (that yellow thing is in fact a courgette from my husbands uncles garden!)
2 Tomatoes
4 handfuls Frozen peas
4 handfuls of Spinach (forgot to put in the picture!)
300g Risotto or Paella rice
1 and quarter pints of Chicken stock
A glass of White wine
Paprika
Parsley
Chop the veg and slice the chorizo
In a large pan heat a little oil and cook the chorizo for 5mins to release the oil from it.
Add the onion and garlic and cook for a couple of mins
Add the courgette and peppers and cook for another couple of mins
Add a tablespoon of paprika
And the tomatoes- cook for another minute
Add 300g of risotto rice and cook for a minute
Add a glass of wine and cook until it evaporates
Add the stock- it’ll look like a lot but it will soon be absorbed.
A little salt and pepper then bring to the boil and reduce to a simmer for around 15mins until the water is nearly all absorbed.
Add 4 handfuls of peas
Your seafood mix (I like to pour the water from the box in too for a little extra fishiness!) Cook through for a couple of mins adding more water if it goes too dry.
Finally stir through a few handfuls of baby spinach and serve!
