A few ingredients go a long way here- when I made this I ended up making 3 more meals worth, bagging them up and freezing them for days when I’m short on time and need something quick and easy! The recipe amounts below are for one meal (4 people) and are really easy to double up!
Ingredients-
Halloumi (or prawns/ chicken)
1 tin of chick peas
1/2 red pepper
1/2 yellow pepper
1/2 green pepper
Handful of baby sweetcorn
1/2 small red onion
1/4 cabbage
1 carrot
5-6 mushrooms
2-3 handfuls of bean sprouts
Straight to wok noodles
1 tablespoon of Sesame oil
1 low salt Stock cube (vegetable or chicken or fish)
2 tablespoons of Soy sauce
Optional- 1 tablespoon of fish sauce
Heat a tablespoon of oil in a wok or deep pan on a high heat.
Cut the halloumi into small chunks and add to the pan with all the chick peas (drained)
Cook, stirring constantly for a couple of minutes.
(Prep the veg before you begin!)
Use a vegetable peeler to make thin strips of carrots, slice the peppers into thin strips, cut the cabbage into small-ish strips, slice the mushrooms.
Add the veg to the wok and continue to stir fry for a couple of minutes.
Add the noodles and stir through
Crumble the stock cube over everything and stir through
Add a tablespoon of sesame oil and stir through
And a couple of tablespoons of soy sauce (low salt version if you can get it)
Cook for another minute and then serve!
