Fruitful muffins

These are fab as a snack, dessert or even breakfast! It’s all about the fruit- there’s tons of it packed in. You can pretty much use any combination of dried fruits in these if you want to substitute any of the ones I’ve chosen. Others that would work well would be dried cranberries, dates, sultanas etc- so find a mix that works for you!

These are really quick and easy to make and they freeze well too!

Ingredients-

3 medium eggs

160ml milk

100ml maple syrup or clear honey

50g butter

225g self raising flour

1 tsp baking powder

2 tsp mixed spice

100g fresh or frozen blueberries

100g fresh or frozen raspberries

100g raisins

100g dried apricots

100g prunes

Lightly whisk the 3 eggs in a large bowl

Add the milk and maple syrup or honey

Melt the butter and add that to the bowl too

Mix gently for a minute (not too long)

Sieve the flour, baking powder and mixed spice into the bowl and give it another brief mix until it’s almost smooth

Add in your fresh fruit

Chop the larger dried fruits (prunes and apricots) into small pieces

Add all the dried fruit

Mix together with a spatula or wooden spoon 

Pour into 12 muffin cases (or grease the tray and pour straight into the tray) then put into a preheated oven at 180 degrees for 22minutes


Cool in the tray for 10-20mins before transferring to a wire rack to cool completely. Enjoy!
