Sprouts have a bad reputation! This recipe makes a lot more of this underrated vegetable and my baby couldn’t get enough. Even my 3 year old cleared her plate. Let’s face it- adding cheese to anything makes it better! And this is no exception. Who says sprouts have to be boiled?!? Kids will be far more inclined to eat veg if we make it more interesting. Give it a try. I know I prefer them done this way!
Sprouts (around 400g)
Lemon rind
2 cloves of garlic
1/2 teaspoon dried thyme
Salt & black pepper
Olive oil
Parmesan or similar hard cheese
Wash the sprouts and cut them in half. Finely slice the garlic and finely grate the rind of around 1/2 of a lemon.
Tip the sprouts, garlic and lemon rind into a roasting pan and sprinkle over the thyme
Drizzle over some olive oil and a little salt & pepper
Use your hands to mix everything together so it’s all coated. Put into a preheated oven at 180 degrees for 12mins
Meanwhile finely grate around 2 tablespoons of Parmesan
After 12mins remove the sprouts from the oven and sprinkle over the Parmesan. Put back into the oven for a further 8mins.
