This is a ‘daddy’ dish in our house! There are certain dishes my husband has perfected and this is one of them. A little goes a long way and it tastes just as good cold the next day with salad.
150g long grain rice
1 onion
1-2 tomatoes
1 red pepper
8-10 mushrooms
2-3 tablespoons of frozen peas
1/2 pint of vegetable (or chicken) stock
1 teaspoon of medium curry powder
Dice the onions. Heat a tablespoon of oil in a deep frying pan and cook the onions on a medium heat for 5-6 minutes until softened
Meanwhile slice the mushrooms and cut the peppers into small pieces
Add the peppers and mushrooms to the pan and cook for another couple of minutes
Add the rice
Then add the stock. Bring to the boil then reduce to a simmer
Add the curry powder and continue to simmer for around 15mins
Add the peas and continue to simmer for 3-4 minutes
Finally cut the tomato up into small pieces and add to the pan, warming through for a minute
Serve! We had ours with roast chicken legs and saved enough to have another day cold with salad! Yummy!!
