Leek and potato soup

This is such a fab comfort food dish! It’s so simple but so delicious- anyone can make this!! 

Ingredients-

2 large leeks

One onion

2-3 medium to large potatoes

Butter

3/4 pint of vegetable stock 

3/4 pint of milk

Salt and pepper

Roughly chop up your leeks and onion

Melt a knob of butter in a large pan

Add the leek and onion and stir

Reduce the heat to low and cover to ‘sweat’ the veg for anywhere between 5 and 15mins

Meanwhile peel and chop the potatoes into small cubes

Add to the pan

Pour in your stock and milk


Add a little salt and pepper, bring to the boil then reduce to a simmer and partially cover. Leave to cook for 15-20mins until the potato is completely soft.

Blend it all together

Enjoy! Simple as that!!
