Cheesy turkey and butternut squash bake

This bake has a bit of a quiche- like texture to it. Turkey seems to work really nicely with butternut squash and the different cheeses used make it super yummy!

Ingredients-

One large onion or 2 small ones

500g turkey mince

5 cloves of garlic

One small- medium sized butternut squash

6-8 mushrooms

4-5 handfuls of baby spinach

1 tsp dried basil

150g Feta cheese

3 eggs

150 ml Sour cream

40g Parmesan

1-2 tbsp fresh basil

Black pepper

Cheddar cheese

Prepare the veg- dice the onions, finely chop the garlic, cut the mushrooms into quarters and chop the butternut squash into small cubes

Heat 1-2 tablespoons of oil in a deep frying pan

Cook the onions on a medium heat for 10mins

Turn the heat up and add the turkey mince and cook through

Add the garlic and the butternut squash and cook for around 10mins stirring occasionally

Add the mushrooms and cook for another couple of mins

Stir in a teaspoon of dried basil and a little pepper


Then throw in the spinach (this picture shows around half the amount I used) and cook until wilted

Cube the feta

Take the pan off the heat and mix in the feta cheese then pour it into an ovenproof dish

Use a fork to whisk 3 eggs in a jug

Pour in the sour cream and whisk together

Finely grate the Parmesan and whisk that in too

Add a good amount of black pepper

And chopped fresh basil and mix together

Pour the cream mixture evenly over the meat and vegetables

Finally grate some cheddar over the top then pop it into a preheated oven at 180 degrees for around 30mins

The top should deepen in colour and be bubbling when it’s done!


Serve on its own or with a leafy salad or crusty bread. Delicious!!
