G’uacamole (no chilli)

I love g’uacamole- I could eat it with everything!! This is a no chilli version which is a little more child friendly than some of the homemade recipes I’ve tried before.

A little tip I discovered recently- if you make the g’uacamole in advance of when you want to eat it, keep one of the avocado stones when you’re making it. Then once it’s made stick the stone in the middle of the bowl and cover and it’ll stay  fresh and stop the colour fading!

Ingredients-

One large ripe tomato

2 ripe avocados

1/2 small red onion

Juice of 1 lime

1 tbsp coriander

Use a large knife to chop the tomato to a pulp

Scoop the flesh out of the avocados

Mash the tomato and avocado together in a bowl

Finely chop the red onion and add to the bowl

Add the lime juice and mix in

Finally chop the coriander finely and stir through.


Simple and delicious! Great with fajitas, enchiladas etc or just for dipping into with tortilla chips!
