Seafood and asparagus salad

Asparagus was on offer at Aldi so I thought I’d use it in a salad seeing as it was a sunny day! I’m not a fan of a dull salad but give me a plate full of variety and taste and I’m all over it! This is an example of the type of salad I might dish up to the family!

Ingredients-

Iceberg lettuce

Rocket

Cucumber

Spring onions

Red pepper

Mushrooms

Tomatoes (get some that were grown in your own country or nearby you- makes all the difference to the taste)

Cooked Beetroot

Avocado (I ended up not using mine as it was past its best when I cut it open)

Asparagus

3 tablespoons Greek yoghurt

2-3 tbsp extra virgin olive oil

1 tbsp white wine vinegar

2 tbsp lemon juice

1-2 tsp paprika

Salt & pepper

Smoked salmon

Prawns

Start with a layer of shredded lettuce followed by a few rocket leaves

Next scatter on some spring onion and cucumber

Some thinly sliced mushroom and chopped red pepper


Some beetroot (watch you don’t stain everything!) and tomatoes

Pop your asparagus spears into a bowl with a tablespoon of water and cover with cling film. Poke a few holes in the cling film then microwave for 3mins. Leave in the covered bowl for a further 1-3mins depending on how soft you want it.

In a bowl whisk together the yoghurt, oil, vinegar, lemon juice and paprika then season with salt & pepper to taste

Arrange the smoked salmon on top of the salad

Do the same with the steamed asparagus and then put a handful of prawns on top


Finish off with a big blob of the yoghurt dressing and enjoy!
