This makes a great dip, it’s fab on toast too. I’m making it today to go on our fajitas!
1/2 small red onion
1/2-1 small red chilli
1 clove of garlic
A handful of coriander
A squeeze of lemon juice
A dash of white wine vinegar
Dice the tomatoes keeping the juice
Chop the onion into small pieces, the chilli into extra small pieces, the coriander can be chopped roughly. Peel the garlic.
Use a garlic press to crush the garlic into the bowl
Squeeze a little lemon or lime in
Add a dash of white wine vinegar and mix everything together
