I do like the smoky bbq old El Paso fajitas kit- it does taste good. But- it’s full of chemicals, extra salt and extra sugar so I fancied trying to recreate them myself!
Since the first time I tried this I’ve adjusted the spice mix slightly (it had a little too much heat first time round)- but I’ve adjusted the recipe below accordingly!
2 chicken breasts
1 Red pepper
1 Green pepper
1 onion
4-6 mushrooms
Flour tortillas
Spice mix (details coming up)
Tomato salsa (recipe in another blog)
Sour cream
Cut the peppers and onion into strips and the chicken into strips/chunks
Ingredients for the spice mix-
1tsp salt
1tsp caster sugar
1tsp ground cumin
1tsp ground coriander
1/2 tsp oregano
1/2 tsp Black pepper
1 tsp smoked paprika
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp chipotle chilli (this one I had to buy from the Internet as I couldn’t find it in any of the local supermarket but it really adds the smokey bbq element so I wanted it!)
Put all the spices in a bowl and mix!
Heat a little oil in a deep frying pan and cook the chicken completely
Add the veg to the pan and cook for a couple of mins
Add 1 & 1/2 tablespoons of the spice mix and cook for a further 2 mins (keep the rest of the spice mix in a jar or pot for the next time you make these!)
