Eggy muffins

These are another good one for baby to pick up which also makes it good picnic food or just an easy lunch/ breakfast option!

Ingredients-

Red onion

Peppers (I saw these cute mini sweet peppers in Aldi and couldn’t resist!)

Tomato

Egg

Milk

Cheese (cheddar or similar)

Chop your tomato, onion and peppers into small pieces

In a bowl crack 4 eggs and add a splash of milk (around 2 tablespoons worth) whisk together with a fork.

Throw all your chopped veg in and mix again

Add a good handful of grated cheese and mix in.

Pour into muffin cases. You can make them directly in the muffin tin but they tend to stick and that makes washing up afterwards a nightmare! Using the paper cases makes things much easier! I made 5 large muffins but you could easily do 8 smaller ones if you prefer!

Bake in the oven at 180 degrees for around 20mins- they will rise slightly and go slightly golden on top.


Serve warm straight away or cool and eat later. They’ll keep in the fridge for a few days and you can reheat them in the microwave.
