If you’re not from the UK the name of this dish might be a little confusing! Firstly there are no toads or frogs involved in this recipe!! It’s a traditionally British dish involving sausages in batter. I like to add red onion and mushroom to mine (any opportunity to add extra veg!)
Ingredients-
Sausages
Red onion
Mushrooms
Flour
Egg
Milk
Whole grain mustard
Thyme
Cut your red onion into quarters and separate the layers- spread over the base of a deep oven tray
Arrange your sausages over the top. Make sure you use good flavoured sausages- these ones are Cumberland.
Cut mushrooms in half or quarters if they’re large. Scatter around the tray.
Sprinkle a tablespoon of olive oil over the top and put in a preheated oven at 180 degrees for 20mins.
Meanwhile sieve 100g of flour into a bowl
Make a well in the middle and crack an egg into it
Slowly add half a pint of milk, whisking as you go
Add 2 teaspoons of whole grain mustard and a teaspoon of fresh or 2 teaspoons of dried thyme. Stir.
After 20mins in the oven remove and quickly pour the batter over the sausages before returning to the oven for around 40mins
Serve with carrots, cabbage or whatever veg you like!
