I love this creamy fish dish- it’s Very easy to make and tastes great. If the amount of cream bothers you why not try it with creme fraiche instead. I don’t mind the occasional creamy recipe so we use full fat double cream!!
Ingredients-
2 salmon fillets
800g of potatoes
4 handfuls of spinach
4 handfuls of frozen peas
One large red onion
Olive oil
Flour
200ml double cream
50-100g Gruyere cheese
Peel and slice the potatoes into 3mm pieces
Put in a pan of water, bring to the boil then simmer for 2-3mins
Heat a tablespoon of oil in a pan and fry the onions on a medium heat for around 5mins
Drain the potatoes and leave to one side to cool
Add a tablespoon of flour and some salt & pepper and cook for another 2mins
In a pan wilt the spinach with the frozen peas (don’t add any water)
Grease an ovenproof dish with butter
Layer everything up- start with a layer of potatoes…
Then half the onions…
Half the salmon…
Half the spinach and peas. Repeat the layers and finish off with an extra layer of potatoes.
Pour over the cream
And grate the cheese on top. Pop into the oven at 180 degrees for 30-35mins
Serve!
Toddler had hers with sweetcorn. Baby found it really easy to pick up the bits of potato with spinach stuck to it. Yummy!
