Easy g’uacamole style eggy bread

This is a quick one that’s great for lunchtime or could even serve as breakfast! 

Ingredients-

Bread

Eggs

Milk

Avocado

Tomatoes

Spring onions

Use a spoon to get the flesh out of the avocado

Mash it with a fork in a bowl

Chop a couple of cherry tomatoes and a couple of Spring onions

Mix it in with the avocado

In another bowl crack an egg and add s splash of milk. Whisk together with a fork

Dip a piece of bread in the egg and turn over to dip again so it’s covered in egg mixture

In a frying pan heat a little oil (I’m using coconut oil because I had some but vegetable oil is fine!)

Put straight into the pan and fry for a minute or so

Turn over and fry the other side for a similar time


Top with the g’uacamole mixture and serve!

Toddler licked the topping off before finishing off the bread! Her 2 favourite things happen to be bread and eggs so this one’s a winner in her books!


Baby ate a lot! She’s not doing badly for 6 months!!
