These fritters are packed with veg and make fab finger food for babies and picnics!
4-5 tablespoons of frozen peas
Grate the courgette
Put the gratings in a clean tea towel and squeeze as much moisture out as you can
Chop the garlic, spring onions and chives and finely grate the skin of half a lemon- put in a bowl with the courgette.
Take the seeds out of the chilli and chop- then add to the bowl
In a bowl put your peas and a couple of handfuls of spinach, cover with cling film, pierce and microwave for 2mins then add to the bowl with the other ingredients.
Chop the feta into small cubes and add to the bowl
Add a tablespoon of paprika, teaspoon of dried parsley and a dash of salt and pepper
In another bowl beat 2 eggs then add to the bowl of ingredients and mix in
Sieve 85g of plain flour into the bowl and mix in. Now you’re ready to fry the fritters!!
Heat some oil in a frying pan (medium heat) and spoon a tablespoon of mixture into the pan at a time- wait for 30secs.
Squash down with the back of a spoon and leave for another minute or two (don’t mess with it- just leave it)
