It’s a classic combination and so easy to make! Now- just because you’re doing baby led weaning it doesn’t mean you can’t have soup (oh but the mess?!)
Baby’s soup is soaked up into a slice of bread and given to her in fingers of sloppy soupy bread that she can pick up and suck or munch on without a horrific amount of mess. Simple!
Ingredients-
One medium broccoli
One onion
One medium to large potato
One stick of celery
Large nob of butter
1 1/2 pints Vegetable stock (if gluten free make sure you find gluten free stock cubes)
150g Stilton
Chop the onions and celery
Melt the butter and cook the onions and celery on a low to medium heat for 5-10mins
Meanwhile peel and chop the potato and cut the stalks off the broccoli and chop them up.
Add the potato and broccoli stalks to the pan and mix
Add a pint and a half of stock, bring to the boil then reduce to a simmer and cook for 10mins
Add the broccoli heads, bring back up to the boil and reduce back to a simmer for another 5mins
Meanwhile chop the Stilton
Add to the pan and stir until it’s mostly melted
Blend into a smooth soup and add a little salt and pepper to taste
Toddler ate hers with a side of spinach and cheese on crackers (her combination suggestion not mine- but I’m not going to argue if she’s requesting spinach!)
