This is a really easy one for a mid week dinner. It takes very little prep work and tastes great! We had clean plates all round. It’s also really easily adapted- just use whatever you’ve got lying around that needs using up!! Ham, pepper, sweetcorn, broccoli, potatoes- most things work well in a quiche!!
2 medium onions
3-4 handfuls of frozen peas
150g frozen prawns
3-4 handfuls of spinach
6 eggs
150ml double cream
150ml milk
150g cheddar cheese grated
50g Parmesan or similar cheese
Salt & Pepper
Slice the onions, heat a tablespoon of oil in a pan and cook the onions on a medium-low heat for around 10mins
Add the frozen peas to the pan
And the prawns and cook for another 5mins to begin thawing them out.
Meanwhile- roughly chop the spinach
Add it to the pan and cook for 2 mins until it’s just beginning to wilt
Pour the mixture into a large quiche dish and spread it out as evenly as you can
In a large jug crack all the eggs in and whisk together with a fork
Add the cream and milk to the jug and whisk together with the fork
Add the grated cheddar and Parmesan and mix through
Add a good amount of pepper and a little salt. Mix everything together.
Pour the egg mixture over the prawn & veg until it fills the dish
Pop into a preheated oven at 180 degrees for 45minutes
Take out and cool for 5-10 minutes before slicing (it slices much better when cooled slightly than straight out of the oven)
Serve hot with sweet potato fries or a side of your choice. Then eat the left overs cold with salad and coleslaw! Delicious!!
