I can’t really take the credit for this dish- it was mainly created by my 3 year old who told me she wanted Carrots and broccoli with bacon and cheese on top for her dinner- so that’s kinda what I created for her!! I’ve called it a bake but it’s not baked! I just couldn’t think of a better way to describe what it is!! Open to suggestions…
2 carrots
2-3 potatoes
1 small broccoli
1-2 leeks
8 mushrooms
5 rashers of smoked bacon (optional)
3 cloves of garlic
1 tub of cream cheese
Cheddar
Mozzarella
Cut the broccoli into small florets, peel and slice the carrots, peel the potatoes and cut into cubes
Put the carrots, broccoli and potato into a pan of water and boil until tender.
Meanwhile, slice the leeks and mushrooms and peel the garlic
Heat 2 tablespoons of olive oil in a large frying pan on a medium heat
Add the leeks and cook for 8-10mins stirring constantly
Use kitchen scissors to cut the bacon into strips
Turn the heat up and add the mushrooms and bacon to the pan. Cook for a couple of minutes
Crush the garlic into the pan and cook for another 2mins
Add the entire tub of cream cheese to the pan and stir through
Drain the veg and pour into a heat proof dish
Spoon over the creamy mixture and spread out on top
Grate over plenty of cheddar and mozzarella
Pop under the grill for 5-10mins until the cheese is bubbling away and starting to colour.
