Curried cod and beans

This is a super simple recipe which tastes surprisingly delicious!! I used 2 tablespoons of curry powder and ended up having to ‘cool’ it down slightly for my 3 year old with a dollop of yoghurt (my 18 month old wasn’t phased however) so if you want to stick on the safe side maybe go for 1 heaped tablespoon!

This makes a great midweek meal- relatively quick and super easy to do!

Ingredients-

One large onion

Handful of green beans

3 cloves of garlic

1-2 tablespoons of medium curry powder

1 teaspoon of ground ginger

2 tins of chopped tomatoes

1 tin of chickpeas

4-6 fillets of cod (I used frozen but fresh works great too)

1-2 tablespoons of fresh coriander

Peel of 1 lemon

Dice the onion, peel the garlic and cut the green beans into 4cm ish pieces.

Heat a tablespoon of oil in a large pan (preferably one that has a lid)

Cook the onions on a medium high heat for 2-3mins

Add the curry powder and ginger


And crush the garlic in. Cook through for a couple of mins.

Pour in both tins of chopped tomatoes 

The drained tin of chickpeas

And the green beans.


Bring to the boil then simmer for around 10mins to thicken the sauce.

Meanwhile- chop the coriander and finely grate the lemon peel.


Place the cod fillets on top of the sauce

Cover with the lid and cook for around 10mins until the fish is cooked through. If you’re using frozen fish you can either defrost before you start or simply cook from frozen for an extra 5mins or so to make sure it’s cooked through.

Sprinkle over the coriander and lemon peel 


And you’re done! Serve with rice or naan.
