So- Aldi was selling coconut sugar the other week and I’d not tried using it before so I jumped at the chance to try out a few things! These macaroons worked pretty well but definitely needed to be topped with chocolate otherwise they’d have been a bit dry- a little dark chocolate, however, is all good in my book- far less sugar and other nasties than you’d find in milk or white chocolate!
4 eggs
200g desiccated coconut
1 teaspoon vanilla essence
2 tablespoons coconut sugar
Dark chocolate (around 100g)
Separate the eggs- we only use the whites so either discard the yolks or keep for something else!
Put the egg whites in a large bowl and add the coconut sugar and vanilla essence. Use an electric whisk to whisk until fluffy and firm.
Add the desiccated coconut
Mix together well and then roll into small balls and place on baking paper on a baking tray and pop into a preheated oven at 180 degrees for 10-12 minutes.
They should look golden round the edges when they’re done. Cool on the tray for 10mins then transfer to a wire rack to cool completely.
Once they have cooled you can top with chocolate! Melt the chocolate either in the microwave or in a bowl over a pan of boiling water.
Dip each macaroon in the chocolate (or drizzle over the top if you prefer less chocolate on top) and then leave to setat room temperature.
