Mince and potato slow cooker stew

I’ve seen this sort of recipe referred to as a ‘poor man’s stew because it uses mince rather than steak. It’s a good one for throwing everything in at the beginning of the day and not having to do anything else until it’s time to dish up!

Ingredients-

800g potatoes

3 carrots

1 sweetheart cabbage

1 large onion

3-4 cloves of garlic

500g beef mince

500ml passata

1 1/2 teaspoon of dried oregano

1 teaspoon of garlic powder

3 tablespoons of tomato purée

400ml water

Salt and pepper

Peel and cut the potatoes into large pieces, peel and chop the carrots into good size chunks, dice the onions, finely chop the garlic and slice the cabbage

Brown the mince in a little oil

Put all the chopped veg into the slow cooker

Pour in the passata and stir through

Add the mince

Add the oregano and garlic powder

Add the tomato purée and water and mix in

Put the lid on and cook on low for around 7-8 hours

Enjoy! Simple and delicious!!
