Why just make lamb koftkes when you could sneak some extra veg in there?! The courgette doesn’t add much to the taste- it’s purely there for the added nutritional value!
500g lamb mince
1 small onion
1 green chilli
2-3 cloves of garlic
1 tablespoon of fresh parsley
1 tablespoon of fresh mint
1 tablespoon of fresh coriander
1 courgette
1 tsp of paprika
1 tsp of ground ginger
1 tsp cumin
1 tsp ground coriander
Finely dice the onion, finely chop the garlic and the chilli and all the fresh herbs
Put the lamb mince in a mixing bowl and add the onion, chilli, garlic and herbs
Also add the paprika, cumin, ground ginger, ground coriander and dried mint
Finely grate the courgette
Squeeze as much juice out of the grated courgette as you can. I simply use my hands and squeeze but you can also use a clean tea towel to do this.
Add the squeezed courgette to the bowl
Use your hands to combine everything into an even mixture
Put it to cool in the fridge for at least 2hrs (if it’s not cold enough it won’t stick together well enough later)
Form into little sausages around a wooden skewer- I’m doing 2 smaller ones per stick but you could do one long one if you prefer!
Now cool again until you’re ready to cook!
Pop them under a grill for around 10-15mins turning at least once until they’re browned.
Serve with salad or pitta or cous cous! Yummy!
