This is one of those ‘throw together’ meals I do when I’m short on time or ingredients! The basis of this recipe gives you loads of options to add whatever you have lying around- tinned tuna, frozen prawns, frozen peas, tinned sweetcorn etc all work nicely! So this is what I had in today so this is today’s version of this basic recipe!!
8-10 mushrooms
8-10 baby sweetcorn
1 red pepper
3-4 handfuls of baby spinach
350g pasta
40g plus a large nob of butter
40g plain flour
3/4 pint of milk
Salt and Pepper
Parsley
40g cheddar
10g Parmesan
Peel and slice the mushrooms, cut the pepper into small cubes, cut the baby sweetcorn into 2cm pieces
In a large frying pan heat a nob of butter
Add the mushrooms, baby sweetcorn and pepper and cook on a medium heat for 10 mins or more, stirring occasionally.
Add a little parsley too if you like!
Meanwhile- Bring a pan of water to the boil
Add the pasta, bring back to the boil and simmer until cooked
Meanwhile- melt 40g of butter in a pan
Add the flour and stir to combine. Keep stirring and cook for a minute or two to get rid of the ‘flour taste’
Add the milk a little at a time whisking constantly with a balloon whisk
Keep whisking until it thickens up
Meanwhile- add a few handfuls of spinach to the frying pan and stir to wilt it
Grate the cheddar and Parmesan into the sauce along with a little salt and plenty of black pepper. Stir to melt the cheese.
Drain the pasta and put it back into the pan
Add the veg into the same pan
Pour over the cheese sauce and stir through to coat the pasta.
