The worlds easiest beef stew!

This is one of those meals that’s perfect for when you need something ready and waiting for you after a long or busy day!

I don’t always like to use the slow cooker (prefer to use the oven) but this one works well in it and makes life super easy!

Ingredients-

500g diced beef

1 onion

1 leek

2 large carrots

1 large parsnip

1/2 swede

1/2 butternut squash

6-8 small mushrooms

2 tablespoons of flour

1tsp parsley

1tsp thyme

1 tablespoon tomato purée

1 tablespoon of Worcestershire sauce

250ml red wine

150ml beef stock

Prep the veg- slice the onions and cut everything else into large chunks. Leave the mushrooms whole.

Pour the beef into a slow cooker that’s warming up

Add the parsley and thyme

Add the flour

Mix well so all the beef is coated

Add all the chopped veg

And the mushrooms and mix through

Pour over the red wine

Add the tomato purée 

The Worcestershire sauce

And the stock. Give it a good stir.

Pop the lid on and cook for 4 hours on high or 8 hours on low.


Delicious and so easy!!
