Kale and potato soup

This is a pretty simple recipe without too many ingredients but it turned out great! I was interested to see how my toddler would react to it- she finished the bowl, asked for more, polished that off and asked for a 3rd bowl!! Totally got her approval- and mine too.

Ingredients-

2 onions

3 large or 4 small to medium potatoes

50g butter

Salt & pepper

150g Kale

1 1/2 pints of vegetable stock (choose gluten free varieties if making it gluten free)

3-4 tablespoons of double cream

(Ignore the milk in the picture- I decided not to use it in the end!)

Roughly dice the onions. Peel the potatoes and chop into small cubes.

Melt the butter in a large pan

Add the onions and potatoes and cook on a medium-low heat for 10mins

Meanwhile remove any large thick stalks from the kale and rinse it clean.

Add the stock to the pan with a little salt & pepper

Add the kale and stir through

Make sure the liquid is just covering the veg once its stirred through. If it isn’t- just add a little more water. Bring to the boil then summer for around 10mins. Don’t over cook it or it will loose flavour.

Blend the soup either in a blender or with a hand blender until smooth.

Add the cream and a little more pepper.


Serve!
