Parsley sauce

This is a very easy sauce to make. You can always make it a little posher by infusing the milk with bay leaves, onions etc- but I’m keeping it simple today!

Ingredients-

40g butter

40g plain flour

3/4 pint milk

Salt & pepper

2-3 tablespoons of parsley

Finely chop the parsley

Melt the butter in a pan

Add the flour and cook through for around 2mins. This part is important. If you skip this step your sauce will taste of flour and not much else!

Slowly add the milk, whisking constantly to avoid lumps. Cook through on a medium heat until the sauce thickens.

Add the parsley and a little salt & pepper

Serve over white fish- yum!
