Mushroom and onion stuffing

This is a quick easy stuffing to make for your Sunday roast and it packs in a few extra helpings of veg to the meal! My toddler could quite happily sit and eat an entire plateful of stuffing!

Ingredients-

2 onions

2 sticks of celery

Large knob of butter

150g mushrooms

3 1/2 slices of bread

1 tablespoon of fresh parsley

1-2 teaspoons of mixed herbs

Black pepper

1 egg


Finely dice the onion and finely slice the celery


Heat a large knob of butter in a large pan


Add the onion and celery and cook on a medium-low heat for 5-6mins


Meanwhile finely slice the mushrooms


Add the mushrooms to the pan and cook until the mushrooms have softened


Meanwhile whizz up some breadcrumbs from the bread in a food processor 


Finely chop the fresh parsley


Take the pan off the heat and add the parsley


Followed by the breadcrumbs


And the mixed herbs and a good amount of black pepper. Stir together


Beat the egg with a fork


Add to the mixture and stir through


Transfer to a shallow baking dish and pat down. Add some small cubes of butter on top if you like then pop into a pre-heated oven at 180-200 degrees for 40mins


Serve with chicken, pork or whatever joint you have!!
