Beef and spinach meatballs

The spinach in this recipe is barely noticeable in the finished meatballs so it’s not really there for flavour- more for the added goodness it brings! If your kids will eat meatballs I’m pretty sure they’d eat these ones!

Ingredients-

500g mincemeat (the leaner the better)

120-150g baby spinach

1/2 small onion

1/2 tsp onion granules

1/2 tsp garlic powder

1 1/2 tsp oregano

1 egg

1 slice of bread

Finely dice the onion


Finely chop the spinach

Put the mince, onions and spinach into a mixing bowl and start to mix together with a wooden spoon

Add the onion granules, garlic powder and oregano

Pop a slice of bread into a blender to make breadcrumbs


Use a fork to beat an egg

Add around 2/3 of the breadcrumbs and 2/3 of the beaten egg and mix together. If the mixture seems a bit wet top it up with a few more breadcrumbs or if it seems a bit dry use the rest of the egg. If it seems OK discard the rest of the breadcrumbs and egg.

Cover a baking tray with tin foil and oil the foil


Roll the mixture into balls (I did mine around golf ball size) and bake in the oven at 170 degrees for 35-40mins

Take out the oven and leave to cool slightly (or leave to cool completely if you want to make in advance and serve later in the day)

Put the meatballs into a pasta sauce and simmer for 10mins


Serve with pasta or in a sub!
