Loaded cheese on toast

I can’t simply give my children cheese on toast when there’s an opportunity to get a few extra veg in there!! Here’s an example of a ‘loaded’ cheese on toast I do. There are so many other things that work well too- sweetcorn, pepper, avocado, spring onion, beans- get creative and let me know what combinations worked well for you!

Ingredients-

Slice of bread (use gluten free bread if required)

Hummus (I’m using shop bought today but I’ll do another blog on making your own hummus another day!)

Spinach

Mushrooms

Cheese (cheddar or similar)

Lightly toast the bread

Spread with hummus

Thinly slice the mushrooms and layer on top

Add a layer of spinach

Then top with cheese

Pop under the grill until the cheese is well melted

Enjoy!
