Chicken and vegetable kebabs

Kebabs make for a great fun weekend dinner. Any meal where you get to assemble it at the table generally goes down well with kids! This is also fab to offer baby in a more deconstructed form!

Ingredients for the marinaded chicken-

2 chicken breast diced

1/2 a large tub of Yoghurt

1 tbsp Olive oil

2-3 cloves of Garlic

1 tsp Ground coriander

1 tsp Ground cumin

1 tsp Chilli powder (mild)

Salt and pepper to taste

Put your diced chicken into a freezer bag or similar

Using a garlic press put 2-3 cloves of garlic into the bag

Add everything else! Don’t go overboard with the salt- just add a little or none at all if you prefer

Massage everything in the bag until the chicken is evenly coated. Place in the fridge for at least 4 hours. Overnight is even better!

Next- choose your selection of veg. We used mushrooms, peppers, aubergine, courgette, sweet potato, red onion and carrot

Chop everything. I used a vegetable peeler to make strips of carrot

Assemble the kebabs. If you’re using wooden skewers, like I am, soak them in water first to reduce how much they’ll burn when you cook them

Brush any remaining marinade over the veg then put them under the grill for 25-30mins turning at least once in the middle.

Plate up!

Serve with pitta bread, diced tomatoes and shredded lettuce (and mayo)

Enjoy assembling the kebab at the table!
